Meatloaf

I tried a couple of new recipes today for dinner (both of which I thought were winners) and I actually didn't find them on Pinterest! It seems like all my recent recipes have been from there. A few weeks ago our church had a rummage sale to benefit one of the families within the church and someone brought a bunch of Kraft and Taste of Home magazines. I snatched up a few and finally got around to looking through them this weekend! I think I found four new recipes to try in the next week and a half so far. First is the meat loaf.

What you need:
  • 1 cup finely chopped onions (about 1 large onion)
  • 1/4 cup Zesty Italian Reduced Fat Dressing
  • 2 lbs extra lean ground beef
  • 3/4 cup of ketchup, divided
  • 1 package of stove top stuffing mix for chicken (I think this was part of the reason I liked this recipe so much. I LOVE stuffing)
  • 1 cup water
  • 2 egg whites
  • 1/2 cup shredded sharp cheddar cheese (I used Colby Jack because 1. I forgot to buy the sharp cheddar and 2. I don't really like sharp cheddar). I thought the Colby Jack worked just fine.
***Note this makes a lot of meatloaf! It serves 8 so we will be eating it for awhile). You probably could cut the recipe in half but I figured I shouldn't be messing with it this first time.***

What you do:
  1. Preheat over to 375 degrees. Cook onions in zesty Italian dressing in large nonstick skillet on medium heat 8-10 minutes or until golden brown, stirring often. Remove from heat; cool slightly.
  2. Combine meat, 1/4 cup of ketchup, stuffing mix, water, egg whites and onions. Mix well. Place meat mixture in 9X13 in baking dish; shape into 10X5 in oval loaf. Spread with remaining 1/2 cup of remaining ketchup. (Yes, I know it's weird to make in such a large dish but like I said it makes a lot of meatloaf and that is what the recipe said.)
  3. Bake 55 minutes to 1 hour or until cooked through. Sprinkle with cheese; bake 2 minutes or until cheese is melted.
Then Enjoy! I thought this made for yummy meatloaf. Keith gave it a thumbs up so I guess it's okay if I make it again.
