Sunflower-cherry granola bars

I got a new cookbook this weekend and have had fun looking through it and trying new recipes. I made this last night and found it was quite tasty!

What you need:
  • 4 cups old fashioned oats
  • 1 cup sliced almonds
  • 1 cup flaked coconut (I didn't use this)
  • 1 cup sugar
  • 1 cup light corn syrup
  • 1 cup creamy peanut butter
  • 1/2 cup raisins
  • 1/2 cup dried cherries
  • 1/2 cup sunflower kernals
What you do:
Spread oats into an ungreased 15inX10in baking pan. Bake at 400 degrees for 15-20 minutes or until lightly browned. Meanwhile, spread almonds and coconut into another ungreased baking pan. Bake for 8-10 minutes or until lightly toasted.

In a pan over medium heat, bring sugar and corn syrup to a boil. Cook and stir for 2-3 minutes or until sugar is dissolved. Remove from the heat; stir peanut butter until combined. Add the raisins, cherries, sunflower kernels, and toasted oats, almonds, and coconut.

Use a metal spatual, press mixture into an ungreased baking pan (15inX10in). Cool to room temperature. Cut into bars. Makes 2 1/2 doxen.

***The recipe says not to grease the pan but I think I'd lightly grease it otherwise it is very hard to get out.***
