Mini Ham 'N' Cheese Frittatas

I made this for breakfast this morning and found it quick and tasty!!


What you need:
  • 1/4 lb cubed fully cooked ham (I would recommend buying precut, much quicker)
  • 1 cup (4 ounces) shredded cheddar cheese
  • 6 eggs
  • 4 egg whites (I just bought the egg beaters for these)
  • 3 tablespoons minced chives (I left these out)
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • The recipe doesn't call for any veggies but I think it would be good with onions or green peppers.
What you need to do:

Divide the ham evenly among eight muffin cups coated with cooking spray; top with the cheese. In a large bowl, beat the eggs and whites. Beat in the chives, milk, salt and pepper. Pour over the cheese, filling each muffin cup three-fourths full.

Bake at 375 degrees for 22-25 minutes o runtil a knife inserted near the center comes out clean. Carefully un a knife around edges to loosenl remove from the pan. Serve warm. Makes 8 frittatas (although we only got 7 because someone got on the counter and stuck her head in one of them...)
