I bit into this and thought "yum, this is really good. It has good flavor." Keith apparently bit into it and thought "hmm...this doesn't have much flavor". I'm not sure how we each had such different reactions but I thought it was very good. Any easy!
I followed the recipe until Keith told me he thought a different way was better so ill include both ways and you can choose. Also since it was just for us two we didn't need as much of each ingredient. We wasted lots of cheese and bread crumbs unfortunately but we will know for next time.
What you need:
- 4 breasts chicken, boneless and skinless
- 2/3 cup milk
- 3 cups cheddar cheese, shredded
- 2 cups Progresso Italian Breadcrumbs
- 2 tablespoon butter, melted
- 1 (18 ounce) can Progresso Creamy Three Cheese cooking sauce
- 1 tablespoon fresh parsley, chopped
Instructions
- Preheat oven to 400 degrees. Cut each breast of chicken into 3 pieces. Dip each piece into
- milk, then cheddar cheese, then Italian breadcrumbs. Place on a parchment-lined baking sheet. Cover with foil. (Keith didn't think this order was right. He insisted I needed to dip into the bread crumbs first then cheese. Not sure if one is actually better than the other).
- Bake chicken in preheated oven for 25 minutes, then remove foil, baste with melted butter, and cook 10-12 additional minutes, or until chicken is cooked through and coating is golden brown.
- While chicken is cooking, place the Progresso Cooking Sauce into a small saucepan and simmer until reduced in half.
- Remove chicken from oven and place on platter. Spoon sauce over chicken. Top with fresh parsley. Serve and enjoy!
We actually got distracted playing the wii and didn't heat up the cooking sauce in time so we just used a little bit of it. I thought it tasted just fine without the sauce. The sauce actually had a smell that made me turn my nose up so ill probably leave that out in the future.
