Fudge Nut Bars

Keith's mom makes these bars for Keith and they are one of his favorite desserts, right up there with lemon meringue pie. They take a little while to make but they're really good.

What you need for bars:
  • 2 cups of light brown sugar
  • 1 cup butter
  • 2 eggs
  • 2 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 3 cups of oatmeal (quick)
What to do:
Combine brown sugar and butter; add eggs and vanilla. Combine flour, soda, and salt. Mix well, then add oatmeal. Spread 2/3 mixture in 9X13 or jelly roll pan. Spread with filling. Top with remaining oatmeal mixture. You may want to add 2 to 3 Tbls of water to remaining mixture for easier spreading.

What you need for filling:
  • 1 can condensed sweetened milk
  • 2 T. butter
  • 1/2 tsp salt
  • 2 tsp. vanilla
  • 12 oz package semi sweet chocolate chips
What to do:
In a double pan, combine condensed milk, chocolate chips, salt and butter until chocolate is melted. Add vanilla. (I don't know what a double pan is...so I just heat in pan and watch it carefully). Bake at 350 degrees for 20-25 minutes or until starting to turn brown around the edges.
