I used a few of my cookbooks and pinterest for recipe ideas. It took me about 4-5 hours and afterwards I had 8 meals and one coffee cake. I'd say it was a good day! Plus, Kolby slept through most of it so I had the kitchen all to myself. It's also nice if making a lot at a time, you can brown meat in large quantities which saves time.
Okay here are the recipes, I forgot a few are crockpot ones just fyi.
Eight Can Soup:
I have blogged this before I think but in case not.
What you need:
-can of green beans
-can of corn
-can of veg all
-can of diced potatoes
-can of hormel chili with beans
-can of hormel chili without beans
-diced tomatoes (I don't like tomatoes so I leave these out)
-can of old fashioned vegetable beef soup
What you do:
Mix all ingredients together. If eating right away, heat up. If you want to freeze put in freezer containers and put in freezer. Very easy! As I've said before, I am a big fan of this soup. It's tasty and easy. Put it with some fresh bread and it's a great meal for a cold day.
Cowboy Casserole (Crock Pot)
What you need:
- 2 lbs. ground beef or turkey
- 1 onion chopped
- 1 tbsp garlic powder
- 1 can of sweet corn
- 1 can cream of chicken soup
- 2 cups 2% shredded cheddar cheese
- 1/2 cup skim milk
- 1/2 cup fat free sour cream
- 1 large bag frozen tater tots
Step 1: Brown meat in a pan with the onions and garlic powder.
Step 2: Mix all remaining ingredients besides the tater tots and place them in a freezer bag.
Step 3: Let the meat mixture cool completely and then place in the freezer bag as well.
Step 4: Freeze the meal and remove to defrost the night before serving.
Step 5: Line the bottom of your crockpot with the tater tots and pour the contents of the freezer bag over them. Cook on high for 4 hours or low for 6. You can add some fresh cheddar cheese to the top the last 30 minutes of cooking if you like. Serve with salad.
We haven't made this yet but will be trying it this weekend and will let you know!
Steak Fajitas (Crock Pot)
What you need:
2 lbs. Inexpensive thin cuts of steak. We used the steak already cut into strips in the meat department.
1 Packet of Fajita seasoning. If you like a peppier meal, you can add two packets.
1 Cup Red, Yellow and Orange peppers
1 Onion chopped into large pieces
1 Jar of Chunky Salsa
What you do:
Step 1: Place the fajita seasoning into a gallon freezer bag with the jar of chunky salsa and squish around until mixed well.
Step 2: Place the remaining ingredients into the freezer bag. Freeze and remove the night before serving to thaw in the fridge. Cook in Crockpot on high for 4 hours and serve over rice.
**We have not tried this one yet but will let you know!**
Goulash
- 1lb ground beef
- 1 can tomato soup
- 6 oz can tomato paste
- 2 cups uncooked elbow macaroni (I used whole wheat noodles)
- 2 Tbsp Italian seasoning (more to taste)
- 1 can (15oz) corn, drained
- 1 tsp garlic powder
- 1 tsp onion powder
- 1-2 cups shredded cheese (depending on your “cheesiness” preference)
1. Brown Ground beef with onion powder and garlic powder. Drain.
2. Cook noodles according to package, drain
3. In a large bowl, combine soup, tomato paste, Italian seasoning, noodles and ground beef. Stir in corn.
4. Transfer to an ungreased 8X8 freezer baking dish and top with cheese. I buy the foil pans. Easy peasy and you wont be missing a pan while this meal is in the freezer waiting.
5. Cover with foil. I like to use heavy duty foil and double wrap it to prevent freezer burn. Label and freeze.
Cooking instructions: Thaw and bake uncovered at 350 degrees for 30-40 minutes until heated through and melted cheese.
***We tried this tonight and it got a "fine" from Keith. It was decided we needed to add more spices of some sort***
Chicken Roll Ups
What you need:
- 8 boneless, skinless chicken breast halves
- 8 thin slices of deli ham
- 4 slices of provolone cheese, halved
- 2/3 cu seasoned bread crumbs
- 1/2 cup grated parmesan cheese
- 1/2 cup milk
What you do:
Flatten chicken to 1/4in thickness. Place a slice of ham and half a slice of cheese on each piece of chicken. roll up and tuck in ends, secure with a toothpick. In a shallow bowl, combine crumbs and parm. cheese. Pour milk into another bowl. Dip chicken rolls in milk then roll in crumb mixture. Wrap each chicken in plastic wrap and place in a freezer bag. Seal and freeze for up to 2 months. To use, completely thaw in the refrigerator. Unwrap roll-ups and place on a greased baking sheet. Bake uncovered, at 425 degrees for 30 minutes or until juices run clear. This makes 8 servings so again we were able to get a few meals from this dish.
Lasanga
What you need:
- 28oz jar of spaghetti sauce
- 1 lb. ground beef, browned
- 8oz jar mushroom pieces, drained
- 16 oz container ricotta cheese
- 1 egg, beaten
- 1 T. italian seasoning
- 8 lasanga noodles, uncooked and divided
- 2 cups shredded monterey jack cheese
- 2 cups of shredded mozzarella cheese
Combine sauce, beef, and mushrooms; set aside. Mix ricotta cheese, egg and italian seasoning together; set aside. Layer as follows in each of 2 ungreased 9X5 in pans: one cup meat sauce, 2 lasange noodles, 1/2 cup ricotta cheese mixture, 1/2 cup monterey jack cheese and 1/2 cup mozzarella cheese. Repeat layers. Cover with aluminum foil. If freezing put into freezer without baking. To serve, thaw overnight in refrigerator. Bake at 350 degrees for 1 1/2 hours.
***We haven't eaten this yet. I'm a little unsure of the uncooked noodles but that is what the recipe said!***
Meatloaf Meatballs
What you need:
- 1 cup ketchup
- 3 to 4 tablespoons packed brown sugar
- 1 tsp ground mustard
- 2 eggs beaten
- 4 teaspoons worchestershire sauce
- 3 cups crispix cereal, crushed
- 3 teaspoons onion powder
- 1/2 to 1 teaspoon seasoned salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon pepper
- 3 lbs of ground beef
In a large bowl, combine the ketchup, brown sugar and mustard. Remove 1/2 cup for topping; set aside. Add the eggs, worchestershire sauce, cereal and seasonings to remaining ketchup mixture. Let stand for five minutes. Crumble beef over cereal mixture and mix well. Press meat mixture into 18 muffin cups. Bake at 375 degrees for 18-20 minutes. Drizzle with reserved ketchup mixture; bake 10 minutes longer or until meat is no longer pink. Cool loaves and then freeze. Store for up to 3 months. when using thaw in refrigerator. Place loaves in a greased baking dish. Bake at 350 degrees for 30 minutes or until heated through. We did try this and they're pretty good. The recipe makes 18 so we actually can get a few meals from this dish (but at different times) which is nice.
I tried one more crockpot one but it was a total flop and not worth posting. I also made my apple cinnamon coffee cake but I think i've already posted that before.
